IT'S SUMMER, IT'S HOT AND IT'S TIME FOR A GREEK SALAD
I love this Greek salad. It's the perfect summer meal. Refreshing and healthy. The recipe is easy and will serve 4 as a side salad or add some chicken and it makes the perfect dinner for just the two of you. Aaron and I both love it especially with a fresh baguette to soak up some of that extra dressing.
Salad Ingredients
1 Hothouse cucumber seeded and sliced into 1/4 inch slices
1 Red bell pepper and 1 yellow bell pepper, (the bigger the better,) both diced into large
pieces.
1 Pint cherry, grape or small colored tomatoes sliced in half.
1/2 red onion sliced thin in half rounds
1/2 Pound feta cheese cut into 1/2 inch square pieces
1/2 cup pitted Kalamata olives
Place the cucumbers, peppers, tomatoes and onions in. bowl and cover with the dressing. Recipe below or use any vinaigrette that you love.
2 Cloves minced garlic
1 Teaspoon dried oregano
1/2 Teaspoon Dijon mustard
1 Teaspoon good salt
1/2 Teaspoon pepper, ground if possible
Whisk together with
1/4 cup good red wine vinegar
Slowly add
1/2 cup good olive oil. Whisk together and pour over vegetables.
Top with the feta and olives and let sit for 30 minutes out of the refrigerator for the flavors to meld.
If you like add some baked boneless chicken breasts and you have the perfect summer dinner.
